GV's Southwest Scramled Eggs with a Kick

1/2 cup Southwestern Egg Beaters
1/4 cup Kraft Free Cheddar Cheese
Pam Cooking Spray
Pico de Gallo*

Combine Egg Beaters and cheddar cheese, season to your liking with pepper.  Spray skillet with Pam and prepare egg mixture.

Serve topped with Pico de Gallo:

1/2 cup tomatoes
1/4 cup white onion
1/4 cup jalepenos
1 tablespoon chives
cilantro (optional)

Ginger, this is not how you make pico de gallo. Use yellow onion. It's sweeter and milder than white onion. Substitute serrano peppers for the jalapenos. Cilantro is a must, not optional. You might want to squeeze some fresh lemon or lime juice into it, also.
