Five Cup Salad - aka Ambrosia

This is an old family favorite that is fruity and sweet without being too naughty.  If you use non fat sour cream, the only real source of fat is the coconut, which isn't too bad at that.

Couple that with it being insanely easy to prepare and you have a nice holiday addition.

1 cup manderin orange segments
1 cup pineapple tidbits
1 cup coconut flakes
1 cup marshmallows
1 cup fat free sour cream

Mix, chill and eat.

Legal Banana Pudding

Banana cream pudding mix
Nilla reduced fat vanilla wafers
Bananas

This southern gal enjoys a good helping of banana pudding as much as the next person, and it thrilled me to learn that this recipe is easy to modify for my weight loss purposes.

The trick is to use fat free milk to prepare the pudding, which helps cut down on the fat of this recipe tremendously.

Layer big bowl with nilla wafers, and then banana slices.
Prepare the pudding according to the directions on the box and pour over the cookies and fruit. 
Chill until set.

GV's Fiesta Wrap

Mission Jalapeno Cheddar Wrap

Filling:
1 cup lettuce
1/2 cup tomatoes
1/4 cup onion
1/4 cup jalapeno
1 tbsp chives
1/4 avocado
1/8 cup Kraft Free Cheddar Cheese

Calories: 359
Fat: 11 grams
Sodium: 975mg

**The fat in this recipe can be cut by avoiding the avocado.

GV's Southwest Scramled Eggs with a Kick

1/2 cup Southwestern Egg Beaters
1/4 cup Kraft Free Cheddar Cheese
Pam Cooking Spray
Pico de Gallo*

Combine Egg Beaters and cheddar cheese, season to your liking with pepper.  Spray skillet with Pam and prepare egg mixture.

Serve topped with Pico de Gallo:

1/2 cup tomatoes
1/4 cup white onion
1/4 cup jalepenos
1 tablespoon chives
cilantro (optional)

Tater Tot Casserole

Tater Tot Casserole

1lb extra lean ground meat (96/4)
1 can Healthy Choice Cream of Mushroom Sauce
Bag of Tater Tots

Brown ground meat.  Add soup and half a can of water, stir until creamy.  Put in 8x8 pan and top with one layer of tater tots. 

Cook at 400 degrees until Tater Tots are browned.

Serves 4.
